Our Go-To Self Isolation Recipe

Self isolation calls for delicious meals and supporting local businesses. As a part of our #HOLIDAYATHOME series, we spoke to our amazing caterer @foodbyhelenk about her go-to gourmet dish that is quick and easy to make. Helen is our favourite caterer for photo shoots and events and now we can all enjoy her fabulous cooking in the comfort of our own home!

Singapore-style Chilled Noodles

This sweet-and-sour noodle dish might look simple, but it is packed with flavour. For a mightier main meal, add some poached chicken.

20 mins preparation

Serves 2 - 3 people

Ingredients
220gm pack Singapore Style wok-ready noodles
3/4 cup frozen peas soaked in boiling water
1 Lebanese cucumber, cut into julienne (long thin strips)
2 spring onions, cut into julienne
8gm ginger (about 1cm), cut into julienne (long thin strips)
3 tbsp roasted sesame seeds, plus extra to serve

2 tbsp coriander leaves

 

Soy Dressing
75ml  light soy sauce
1tbsp  rice wine vinegar
1/2 tbsp vegetable oil
1tsp sesame oil
1tsp Sriracha
1/2 tsp Xylitol or preferred sugar
    Method

    1- For soy dressing, whisk ingredients in a bowl until smooth.
    2- Soak noodles in boiling water for 4 -5 minutes to soften. Drain and set aside. If you are not eating noodles immediately, toss in a little vegetable oil.
    3- Place noodles in large bowl and toss with dressing, cucumber, peas spring onion, ginger and sesame seeds. Serve sprinkled with extra sesame seeds and coriander leaves.
